Choy Po Omelette

A simple dish when you are running out of ideas of putting another dish on the dining table. Eggs are always a favourite food of mine since young. So for tonight dinner, we had Choy Po Omelette as well. All you need is just soaked the Choy Po earlier to reduce the saltiness, beat 2-3 eggs and add in the Choy Po. Stir till well mixed. Salt was not needed here as Choy Po was already salty in taste. Pan fry the egg mixture on a non-stick pan. Now you go - another simple dish to be presented on your dining table.

Scrambled Egg with Cauliflower

Cauliflower was one of my favourite vegetable when I was small as I dislike green leafy vegetables back then. Thus, I am constantly searching for new ways to cook my all time favourite vegetables. I found this recipe in one of my cookbook collection and decided to try it out. Hubby commented it was very good and it's a new way to cook cauliflower. I do agree with him as this dish was very delicious and it's one of the easily prepared comfort food at home.



Ingredients

200g cauliflower, cut into florets and blanched
2 shallots, minced
2 tbsp dried prawns, soaked
3 eggs, mixed with 1/2 tsp salt and beaten lightly

Seasoning
1 tbsp oyster sauce
1/2 tbsp light soy sauce
dash of pepper

Methods
  1. Heat up oil in wok. Saute shallots and dried prawns till fragrant.
  2. Add in blanched cauliflower, seasoning and mix well. Lastly add in beaten eggs and stir fry till cooked. Dish up and serve.

Steamed Eggs with Minced Pork

This is actually my first try in steaming eggs. I always have the perception that steamed eggs are not that easy to prepare but after this first attempt, I felt that my perception was actually way way wrong. All it takes for making this dish was just purely patience as in not over stirring the beaten eggs to minimize bubbles which will spoilt the appearance of the steamed eggs. I am thinking this wouldn't be my last try on steaming eggs. More steamed eggs gonna be served in our house as it's simple, healthy and delicious.

Stir fry minced pork till it's just cook.

Transfer the minced pork to a deep dish.

Pour in egg mixture.

Add in diced carrots.

Placed it on a steamer. Steamed it for 15-20 minutes at medium heat.
Hot steaming steamed eggs out from the steamer.

The inside of the steamed eggs - minced pork and carrots.



Ingredients
150g minced pork
1/4 carrot, diced

Egg mixture
3 eggs
3/4 cup water or stock
1/2 tsp Chinese cooking wine
1/4 tsp light soy sauce

Marinade (minced pork)
1/2 tsp soy sauce
1/2 tsp sesame oil
1/2 tsp Shao Xing wine
dash of white pepper
some coriander leaves, finely chopped

Methods

  1. Egg mixture: Break eggs into the bowl. Do not beat eggs but gently stir the egg to minimize bubbles. Add the rest of ingredients. Stir till well mixed.
  2. Combine minced pork with marinades and mix well. Leave it for at least 10 minutes.
  3. Heat oil in wok. Stir fry minced pork till it's just cooked.
  4. Arrange the stir-fry minced pork in a thin layer on a deep dish. Add in egg mixture and topped up with diced carrots on top.
  5. Steam eggs over medium heat for about 15 minutes. To test if the egg mixture is cooked, insert a bamboo stick into the mixture: if a little clear liquid comes out, it is cooked. Serve hot.

Stir Fry Lady Finger with Eggs

Lady fingers or Okra was a type of vegetables which I dislike when I was small due to it's slimy texture but surprisingly for the past few years I had started to grow fond of the taste of lady fingers. There was a bottle of crispy prawn chili sauce sitting inside my kitchen cabinets. Thus I had used the sauce to cook the lady fingers. The sauce enhance the flavour of the lady fingers and it was yummy and aromatic. I had stir-fry the lady fingers longer as I prefer the lady fingers to be softer.

Ingredients

250g lady fingers, sliced
2 eggs, beaten
2 cloves garlic, diced
1 shallots, diced
3 tbsp crispy chili prawn sauce
1 tsp salt
1 tsp sugar


Methods
  1. Heat oil in wok. Add in garlic and shallots. Stir fry till aromatic.
  2. Push garlic and shallots aside. Add in beaten eggs and stir fry till cooked.
  3. Add in lady fingers and crispy chili prawn sauce. Stir well. Add in the rest of the ingredients.
  4. Let it simmer for 5minutes or longer if you prefer a softer lady fingers.
  5. Dish up and serve hot.

Chives Omelette

Eggs are very versatile. They are many ways we can have them; we can have them fried, cooked in the shell, poached, baked and of coz scrambled. This round I'll have them scrambled and to add on I added Chives into them. Chives have many different names such as garlic chives, Chinese chives, Chinese leek and also Kucai. It was often used in culinary to bring the flavour of the dishes because it taste like a sweeter and milder version of onion. Thus making Chives an excellent choice for making savoury omelette. Yummy!

Ingredients

4 eggs, lightly beaten
40g chives (adjust according to your taste), cut 1 inch length
salt and pepper to taste

Methods

  1. Lightly beat the eggs. Add in salt and pepper to taste.
  2. Add in chives to the egg mixture and mix well.
  3. Heat up oil in pan. Pour in egg mixture.
  4. Pan-fry at medium heat until set. Turn it over and continue to fry until golden brown. Dish up and serve.

Simple Egg Burger

One for me, one for Hubby..


Our dinner tonight is simple egg burger as I am rushing to finish up all the burger buns that is going to expire soon. Two buns down and two more to go.. Hope that we can finish it up soon. So the ingredients I had used for the burgers were eggs, cucumber, tomatoes and lettuce leaves. Simple and healthy since we had a very heavy lunch earlier in Ulu Yam.

Bittergourd Omelette

Ingredients

(A)
1 tbsp oil
1 tsp garlic, chopped
salt to taste

(B)
6 eggs,
1 1/4 tsp salt
1 tbsp light soya sauce
dash of pepper and chicken stock
3 tbsp oil, for frying omelette

Methods

  1. Heat up oil and saute chopped garlic until fragrant. Add in bittergourd and mix well. Add salt and continue to stir-fry until bittergourd is soft. Dish up.
  2. Combine bittergourd, ingredients B in a mixing bowl and mix well.
  3. Heat up 3 tbsp oil, pour in mixture (2) and pan-fry at medium heat until set. Turn it over and continue to fry until golden brown. Dish up and serve.

Note: Before cooking bittergourd, add salt to bittergourd and blanch with water for 2-3 minutes, wash and squeeze dry to reduce the bitter taste.

Wholesome American Breakfast

Breakfast - the most important meal to start our day. The word came about because it means breaking the fast after one has not eaten since the night before. I googled for the definition of American breakfast. It typically said the breakfast consists most or all of the following : eggs, bacon or sausages and breads with coffee/tea or juices. I supposed my own creation of breakkie fits the term. :) I had scrambled eggs, sausages, bread, onion rings, hash brown and salads. It is definately a wholesome breakfast for both of us to start our day with our mission for today : SPRING CLEANING for our house..

Ingredients

3 eggs

2 slices cheddar cheese (sliced)

1 tbsp butter

Methods

  1. Slice the cheese into tiny squares.
  2. Crack the eggs into a bowl and mash them up with a fork.
  3. Put the butter on a saucepan on a stove-top set on high.
  4. Let it melt and move it around until it covers the entire pan.
  5. Pour the cheese and the eggs into the pan, and using a fork or something else, spread the eggs around, never letting them stay in one space too long.
  6. Take the eggs out when you desire according to wether you like them hard or soft.
