Cheesy Corned Beef Wraps

What to do with the leftover corned beef? Just wrapped them up with lettuce leaves and tortilla wraps spread with melted sliced cheese and we got ourselves prepared for a fast and simple food prepared for dinner. Pretty simple right? Hehe.. That's how lazy I am for today and topped with the fact that we had lots of leftover corned beef from dinner the other day. It's amazing that the beef still taste great after being in the fridge for almost 2 days.

One pax serving - you can be very full with just one piece of wrap

Fillings inside : corned beef, lettuce leaves wrapped with tortilla spread with melted cheese


Ingredients

2 pcs tortilla wraps
2 slices cheese, shredded
corned beef
lettuce leaves
olive oil


Methods
  1. Add olive oil to a non-stick pan and heat up a tortilla wrap.
  2. Melt 1 slice of shredded cheese on the wrap.
  3. Remove the wrap and transfer to a plate. Add in lettuce leaves and corned beef.
  4. Roll up tightly from side with fillings. Cut diagonally in halves or thirds.
  5. Repeat for the remaining tortilla.

Corned Beef with Potatoes and Capsicums

I was reading about this dish in Lily's blog and it prompted me to try it out as well. As usual, I'll googled about the dish to get to know more before I start cooking. There's plenty of ways and ingredients to cook the corned beef. A trip to the nearby grocers and this little can of beef really makes my eye balls poked out. It's kinda expensive in my opinion. Maybe it's because it were imported goods. Therefore, it's slightly more expensive. The corned beef costs me RM12 plus. I had paired the dish with the Savoury Couscous. Hubby commented that both of the dishes goes very well together.


Ingredients

1 can corned beef
1 onion, diced
1 tbsp garlic, minced
1 red capsicums, diced
4 small sized potatoes, diced
1/2 cup corns
black pepper to taste

Methods
  1. Add oil to a saucepan. Saute onion and garlic until soft. Add in potatoes and cover the saucepan with lid and leave for few minutes to soften the potatoes.
  2. Add in capsicums, corns and corned beef. Stir well until heated through.
  3. Add in black pepper to taste and mix well.
  4. Serve hot.

Rice Burger

Rice burger was something that attracts my interest when I was browsing the Internet few weeks ago. It still looks like burger with only one difference which is instead of the normal buns used, it was substitute with 'buns' made of rice or rice patties. The concept of making the rice patties are similar to preparing onigiri.

Placed cooked rice on to the mould. I had used Japanese rice since they tends to be sticky after being cooked.

Add in any type of filling that you prefer in the middle. I had used salmon furikare and scoop in cooked rice again on top. Pressed hard to form rice patties.

The end result - rice patties.

Brush a bit of soy sauce on the rice patties and pan-fry/grill them.

Beef and Cheese Burger

What is nicer than taking a huge bite of a yummylicious beef burger filled with oozing cheese during the weekend at comfort of our own home. I had bought a packet of beef steaks from Cold Storage few weeks back. Finally I had a chance to try them out. It was really worth every penny spent! I had used butter instead of oil when pan-frying the steaks. The meat was juicy and tender and of coz buttery flavour too.
Ingredients
2 beef steaks
2 eggs
1 tomatoes, sliced
1 onion, sliced
1/4 japanese cucumber, sliced
2 slices cheese
lettuce leaves
butter for pan-frying
2 burger buns
Methods
  1. Poach eggs in microwave using egg poacher. Put aside.
  2. Sautee onion in a little of the butter until soft but not brown. Put aside.
  3. Heat butter in pan and fry patties for about three minutes on each side or until golden brown.
  4. Place all the ingredients on the burger buns.
  5. Serve with french fries.

We have officially moved in to our new place for almost 4 months now. Being a lazy bum, I have not actually cooked or utilize our new kitchen area after spending a small fortune in that section of our love nest. So today, I decided to cook something special for us. I have been contemplating of trying to dish up steak since last year. Well, better late than never. I had prepared side dishes like mashed potato, roasted tomatoes, mushroom soup (Campbell's) and garlic bread for our main meal. Here's the picture of our first 'home cooked meal'. Bon appetit!

Beef Curry

CURRY will always be a 'must have' items when it comes to eating Nasi Briyani. Since Hubby loves beef, I had chosen to cook Beef Curry as a side dish with my Nasi Briyani. My Mummy taught me to use the cooking curry sauce to save all the hassle in the curry cooking process. This is my second attempt of using the sauce to make curry. My previous attempt was chicken curry and it was a success. Therefore, I had used the same way again and it never fails me.. :) The curry was so delicioius and the fragrance of the curry while it is cooking was just so aromatic and heavenly. Hmm.. writing this post makes me crave for more curry..

Ingredients

1 packet of curry cooking sauce
450g beef, cubed
3 potatoes, cubed
300ml water
salt to taste

Methods
  1. Empty the curry cooking sauce into wok. Boil for 1-2 minutes.
  2. Add beef. Stir well and boil. Add in potato cubes and water. Stir.
  3. Continue cooking until beef is tender.
  4. Add salt to taste.

Beef Lasagna

A few days ago a friend of mine gave me this recipe. Therefore, I decided to prepare lasagna for our dinner tonight. Indeed, the recipe was delicious and yummy.


Ingredients

250g lasagna sheets
2 tbsp oil
1 onion, finely chopped
1 carrot, finely chopped
1 clove garlic, crushed
500g beef mince
5 tbsp tomato paste
2 x 400g canned tomatoes
2 cups of chicken stock
salt and pepper to taste
pinch of nutmeg
2 tbsp butter
2 tbsp plain flour
2 cups milk
125 g mozzarella or cheddar cheese


Methods

  1. Bring a large pot of water to a boil; season with salt. Add lasagna sheets, and cook until pliable and al dente, 1 to 2 minutes. Drain, and rinse under cold water.
  2. Meat Sauce: Heat oil in a saucepan. Add onion, carrot and garlic, cook until soft. Add beef mince, cook until brown. Stir in tomato paste, canned tomatoes and chicken stock. Season with salt, pepper and nutmeg. Cover and cook gently for 20 minutes.
  3. Cheese Sauce: Melt butter in a separate saucepan, stir in flour and cook for 2 minutes over gentle heat. Remove from heat, stir in milk. Return to heat, stir until thick and smooth. Season with salt, pepper and add mozzarella or cheddar cheese, stirring over low heat until cheese melts.
  4. Preheat oven to 180 degree celcius. Pour 1/2 cup of the meat sauce into a lightly greased baking dish. Alternate layers of lasagna, meat and cheese sauces, ending with cheese sauce layer. Sprinkle with grated cheese, bake in oven for 35 - 40 minutes or until cooked through (test if cooked by pricking with a fork). Sprinkle with some herbs and serve hot.
