Cornflakes Cookies

Monday, February 1, 2010

This cookies are commonly found in any household during the festive season. It's easy to make and in line with the CNY, I had purposely chosen red cupcake liners for them. I think this cookies are great and popular among kids as I was told by Hubby, his sister's children 'sapu' finish all of them in one afternoon. I suspected the reason behind it was milk powder was one of the ingredients for this recipe. 'Hehe' .... should make and find more recipes that contain milk powder in the future.

250g butter
80g icing sugar

50g milk powder
180g plain flour
200g potato flour

100g cornflakes (crushed)

Material needed: Small cupcake liners

  1. Preheat oven to 150 Celsius.
  2. Beat A until light and fluffy. Fold in B and finally fold in C.
  3. Divided (2) into 8 grams portions. Place into small cupcake liners. Arrange on baking trays.
  4. Bake in a pre-heated oven for 20-25minutes.
  5. Cool on wire racks completely before storing in airtight containers.
