Stir-fried Potatoes with Mushrooms

4 potatoes, peeled,thinly sliced
1/2 tsp salt
1 tbsp oil
8 mushrooms, stemmed and caps sliced
1 tsp ginger juice
1/2 tbsp Shao Xing wine
1/2 tbsp oyster sauce
1/2 tbsp soy sauce
1/2 tbsp sugar
Methods
- Cover potatoes with water and salt in a medium saucepan. Heat to a boil. Cook till almost tender and drain.
- Transfer to a bowl filled with cold water and ice and leave to cool completely. Drain on paper towel and pat dry.
- Heat a wok over high heat. Add oil.
- Stir-fry potatoes in oil until tender. Add in mushrooms, ginger juice, wine, oyster sauce, soy sauce and sugar.
- Cook, stirring, until all liquid is absorbed.
- Dish up and serve hot.
