Bittergourd Omelette

Ingredients

(A)
1 tbsp oil
1 tsp garlic, chopped
salt to taste

(B)
6 eggs,
1 1/4 tsp salt
1 tbsp light soya sauce
dash of pepper and chicken stock
3 tbsp oil, for frying omelette

Methods

  1. Heat up oil and saute chopped garlic until fragrant. Add in bittergourd and mix well. Add salt and continue to stir-fry until bittergourd is soft. Dish up.
  2. Combine bittergourd, ingredients B in a mixing bowl and mix well.
  3. Heat up 3 tbsp oil, pour in mixture (2) and pan-fry at medium heat until set. Turn it over and continue to fry until golden brown. Dish up and serve.

Note: Before cooking bittergourd, add salt to bittergourd and blanch with water for 2-3 minutes, wash and squeeze dry to reduce the bitter taste.
